In my house, we don’t say “Grandmother.” We say Tata.

In Arabic, Tata can mean many things depending on where you’re from. For us, it was the woman who held the keys to the house before we lost the house. It was the woman who knew how to make a single loaf of bread stretch for three days when the siege tightened.

Americans like to think of cookbooks as collections of hobbies. Things you do on Sundays when you have time and a clean countertop. This is not that. :)

This is an archive. My Tata didn’t write these recipes down, and she definitely didn’t intend for them to be published. She taught them to my mother because she was afraid they would disappear. (They never do, but Palestinian Tatas are dramatic. It’s a survival mechanism.)

Today, I realized she was right to be afraid. They are trying to erase everything else. They haven’t figured out how to erase the taste of za’atar yet.

So here it is. Tata’s Kitchen, where our Palestinian food recipes live. Not for your dinner party but for your memory from ours.

لغة حب امي هي نص القوائم. سواء قوائم تسوّق، او قوائم أمنيات يوم يُرفع الحصار فنطير في العالم، وقوائم «ماذا أنجزتَ اليوم» كي تنتشلني حين أغرق في الاحباط، والقائمة المرعبة «أخطاؤك التي ارتكبتها في ٢٤ ساعة السابقة». طبعا هي لاتحتاج ان تكتب الاخيرة، فقد حفظتها عن ظهر قلب.

كانت تقاطع نهمي للمسلسلات بطبق فاكهة مقطّعة، وصدق لاذع مكتوب بخط يدها على ورقة. فاكهة + نصيحة مجانية = علاجها الشامل.

في سن المراهقة، كانت تقلني كل يوم إلى بحر غزة في سيارتها الصغيرة الظريفة «عزيزة»، اللي كانت تشبه المينيون أكثر من اللزوم، مقتنعة أن غروب الشمس ورذاذ البحر سيُشفيان دائي المناعي ويُلْمِمان قلبي المكسور. وكانت تُحلّي كلامها وترقق اسلوبها... إلا حين تضعه في قائمة. هناك فقط كانت الحقيقة تخرج عراة تمامًا، بلا رحمة، بلا منكّهات، وبلا حتى مقدمة!

والآن يا أمي، أحمل هذا التقليد بين طيّاتي. لم أعد أتساءل هل ستتحرّر فلسطين، بل صرت أعرف يقينًا أنها ستتحرّر. السؤال لم يكن يومًا «إن»، بل «متى يا ترى؟». فها هي قائمتي، التي تعيد شحن بطاريتي بعد ما استنزفني الصبر والسخط والإبادة... لغة حبّي إليكم جميعًا.

لأن الأمل أحيانًا يصبح سامًّا مرّ الطعم كالدواء بدون سكر، أما الحقائق فتجعلك تبتسم وأنفك مرفوع للسماء كأنك فزت بجائزة.

واشنطن تُبادر وتكسر الجمود
أول ولاية أمريكية تجرؤ على سحب أموالها من شركات مرتبطة بإسرائيل، وباعت سندات «كاتربيلر» بـ62 مليون دولار. نظروا إلى المخاطر وقالوا بكل برود: «لا شكرًا، خلّوها عندكم».

مينيسوتا وميشيغان تودّعان سندات إسرائيل
وداع دراماتيكي. مينيسوتا تخلّت عن معظم حيازاتها. حتى النقود صار عندها ضمير!

My mother’s love language is making lists, grocery lists, wishlists for when the siege lifts and we can finally travel, “things you’re doing right now” lists to boost me when I’m down, and the dreaded “things you’re doing wrong” lists (she memorized this one). She would interrupt my TV binges with plates of cut fruit and honesty served on paper. As a teenager, she drove me to Gaza’s sea every single day in her little minion-looking car, convinced the sunset and salt air would heal my autoimmune disease and mend my broken heart. She often sugarcoated her words… until she put them in a list. That’s when the truth came out.

Well, Mama, the tradition continues. I don’t wonder if Palestine will be free anymore, I know it will. It’s always been a matter of when. So here’s my list, my love language to you all. Because hope can feel lethal sometimes, but facts? Facts make you grin with your head held high.

You don’t need to hold on to hope alone. This is a collective liberation movement now, and my dear, you have plenty of reasons to smile today. Here’s what happened in the past month and recent weeks:

Washington State Goes Full Trailblazer
The first US state to divest its own funds from companies tied to Israel selling off $62 million in Caterpillar bonds. Basically, Washington looked at the risk and said, “We’re good, thanks.” Mama would call this “smart money moves.”

The club rose and fell on Lucy’s skull with a wet brutal thud. She was chained in her family’s yard in Atara, near Ramallah. The video continued recording an Israeli settler raising the club then smashing it against the dog, there was no snarl and no lunge, just the sound of wood on bone and the low, broken whimper that followed each strike, Another dog was watching in the corner, yapping at the settler, in a desperate plea. The masked settler kept hitting with full force. Blood ran from her eyes, her fractured skull as she laid motionless, but the settler didnt stop, he hit harder. The camera, held by a neighbor, did not shake, I really don’t know how it didnt shake, were they used to seeing this brutality from Israelis? Were they in shock? I have been watching my family and friends in Gaza burn alive, forcibly starved and hollowed inside out, my body was shaking watching this savagery. I already knew it would end with another Israeli “investigation”, and nothing would happen. Not because it’s a dog, but because they do the same to humans.

Last month the same shiver went down my spine when I watched a French nun get pushed and kicked to the ground by a settler in occupied Jerusalem. Other Israelis stood there watching her being beaten. I know Israeli terrorism very well, but it still shakes me. It still shocks me every single time.

This wasn’t one disturbed man losing control, It is the occupation’s habit made visible. Palestinians have been enduring this violence for more than 78 years.

Days earlier, the same village saw settlers throwing rocks at cats during another violent raid. In Hebron, three dogs belonging to one Palestinian family were killed, some poisoned, others beaten, part of repeated assaults that also took their sheep. In the South Hebron Hills, footage captured settlers bludgeoning lambs in pens, slitting throats, then abusing the carcasses. B’Tselem has documented settlers beating livestock with clubs, slamming them to the ground, running vehicles over herds.

UN OCHA records tell the larger count: thousands of sheep and goats stolen or killed in settler attacks since late 2023. One March 2025 raid in the Jordan Valley alone took or killed over 1,400 animals. Donkeys are led away. Water troughs smashed. Grazing land turned into settler pasture while Palestinian flocks starve or scatter. These are not accidents of “tensions.” They are tools to empty land.

I remember my aunt’s goats in Gaza’s outskirts before the big assaults. Thin, tough creatures that knew every stone path. One morning after a raid we found several with broken legs, throats opened not for meat but for message. The same logic travels the West Bank hills, hurt the animals, break the shepherd’s will to stay. Livestock is not just animals, It is livelihood and memory. It is love for the land itself. Destroy the herds, and the people will soon follow.

For decades, Humans and animal rights organizations have monitored and recorded settlers poisoning grazing fields and water sources, killing dozens of sheep in single attacks. In 2005, settlers poisoned scores of sheep and even gazelles near Tuwani. In 2012, thirteen sheep died after poison was sprayed on fields near Hebron. Similar poisoning of dogs, sheep, and entire flocks has recurred in Hebron hills, Jordan Valley, and near Jericho. Donkeys stabbed to death, herds run over by vehicles, lambs tortured in pens, these tactics stretch back years, forming a consistent weapon to force Palestinian families off their land.

on January 2026: B’Tselem published videos of clubbing and stone-throwing at tied and penned animals. May 2026: Lucy’s beating, caught clearly, “investigated” by Israeli police only after viral outrage. Haaretz reported it straight, a dog tied and attacked in its yard then the army blocked its rescue by the Palestinian family.

Where are the Western animal rights organizations? PETA, loud on fur farms, circuses, and lab animals in the West, has stayed largely silent on this systematic cruelty under occupation. Protests have formed outside their offices demanding accountability. Their occasional statements speak of “animals suffer in all wars” while Palestinian pets and herds are targeted as policy extension to ethnically cleanse the humans. They have criticized Palestinians before, but settler clubs on chained dogs draw no campaigns, no emergency appeals and no boycotts.

This is the hypocrisy laid bare, when animal rights, for many Western groups, stops at certain borders and certain victims. When the beaten dog or slaughtered lamb belongs to a Palestinian under military occupation and settler expansion, the outrage evaporates. Cats thrown from heights near settlements, sheep run over by ATVs, guard dogs clubbed while chained, these images circulate on phones across the world, yet major animal rights machinery remains absent. Eastern animals, it seems, do not count the same when the hand holding the club serves a project of displacement and genocide.

The system is clear, occupation normalizes cruelty. If you feel desensitized, thats on purpose, they want you numb and hopeless. This system protects the settler who beats the dog, rarely punishes the pattern, and counts on the world to look away when the victims walk on four legs first, then two. Impunity for one feeds impunity for all.

Lucy survived after her family persisted and rushed her through checkpoints for treatment. She lies bandaged in the yard now, trembling at every sound, eyes still swollen. The yard is quieter, while the chain remains. We know that the next raid is only a matter of time.

10. The Acceptance Phase

Realize you'll never get it 100% right. You'll slip. I'm 38, have been boycotting since I turned 14, and I still manage to accidentally fund the machine. Because capitalism is a bitch. You'll buy the wrong thing. You'll stand in front of the Kinder Bueno shelf, pouting like a toddler who just remembered the game is rigged. And that's fine.. Cancellation isn't about perfection, It's about direction. Every time you choose differently, you're voting with your wallet, your attention, and your quiet refusal to look away. It's passive resistance, we can do that, can't we?

Now, the humor ends here. Nothing is light or funny about genocide. I remind myself of that every time I stand in front of that Ferrero Rocher shelf. Every time I scan a barcode and feel that familiar pit in my stomach. Every time I have to unlearn a lifetime of convenient ignorant consumption. This isn’t just about avoiding complicit companies. It’s about refusing to fund a system that trades human lives for quarterly earnings, that markets health-harming, profit-optimized products while bankrolling violence, displacement, and mass killings.

We’re not just boycotting anymore. We’re straight-up cancelling. Not out of spite (okay, maybe a little), but out of sheer necessity. Because when corporations profit from suffering and then gift-wrap it in shiny, cute packaging with a smiling mascot, the most radical thing you can do is stop buying their shit.

And yeah, it can feel exhausting. But honestly, so is existing in this timeline.

RECIPE : Roz ma’ Dajaj | Lebanese Chicken and Rice

A Lebanese mama-approved dinner with personality, a little dramatic, a little playful, topped with toasted nuts because we like our comfort food crunchy and our egos modest. The rice refuses to clump (it learned manners in the south), the chicken remembers every spice, and it arrives at the table like an auntie who warmly nags, “Did you eat?”

This dish will be short on time, long on character.

For the Rice (The Foundation, handle gently)

Method (How to transform impatience into dinner)

Prep & safety notes: have a thermometer handy (chicken is safe at 165°F / 74°C). Drain soaked rice well so you don’t add extra water.

Step 1, No pale-looking chicken
Pat chicken dry. Mix 1 tsp salt, 1/2 tsp black pepper, 1 tsp cumin, 1/2 tsp cinnamon, 1/2 tsp paprika, rub over chicken. Heat oil in a heavy, wide pot over medium-high. Brown chicken 4–5 minutes per side until golden. Remove and set aside. (If using the tomato option, add the diced tomato or diluted paste now and sauté 1–2 minutes to loosen fond.)

Step 2, Build the rice base
Lower heat to medium. Add 1–2 tbsp oil if needed. Sauté chopped onion until soft and translucent (6–8 minutes, a fine time to sing or vent). Add garlic and cook 30 seconds. Stir in cumin, baharat, turmeric, salt, and pepper, cook 30–60 seconds until fragrant. Add drained rice and toss to coat in the spiced oil for 1–2 minutes.

Step 3, Combine and simmer (Do not be the person who lifts the lid)
Nestle the browned chicken pieces on top of the rice. Pour in 3 cups hot stock so it just covers the rice (if your rice was soaked and drained, this volume is correct). Drizzle saffron water if using. Bring to a gentle boil, then reduce to the softest simmer. Cover tightly and do not lift the lid, this is a law. Cook 20–25 minutes until rice is tender and chicken reaches 165°F / 74°C. If using a whole chicken or larger pieces, adjust time and ensure internal temp.

Step 4, Rest and finish (The Necessary Pause)
Remove from heat, keep covered and let rest 10 minutes. This lets steam finish the job. Gently fluff rice with a fork and fold the chicken juices through. Stir in 1–2 tbsp butter if you want silk.

Step 5, The Presentation (YALLA)
Mound rice on a large platter, crown with chicken pieces or spread shredded chicken over the top. Scatter toasted nuts (see below), that crunch is punctuation. Sprinkle parsley, offer lemon wedges, and serve.

Nuts: Toasting (non-negotiable)
Heat 2 tbsp butter or oil in a small pan over medium. Add slivered almonds, stir constantly 2–3 minutes until golden. Add pine nuts last, they burn faster. Remove immediately.

Serving notes
Serve with plain yogurt or cucumber-yogurt (laban wa khyar) to cool the palate.
Simple tomato-cucumber salad with lemon and olive oil (or fattoush) makes a bright companion.
Reheats well: add a splash of stock when warming to revive the rice.

Quick tips
Rinsed rice = separate grains. Do not skip.
Soaking basmati 15–20 minutes helps fluffiness but drain well.
Browning chicken buys you flavor in spades, don’t fake it.
Use hot stock when adding to rice so the simmer starts fast.
If the rice isn’t done but liquid is gone, add 2–4 tbsp hot stock, cover, and continue low heat 3–5 minutes.
Leftovers: pack nuts separately until serving to keep them crunchy.
